At peak maturity, each agave is carefully hand-selected by skilled harvesters. Only plants at optimal ripeness are chosen, ensuring consistency, quality, and depth of flavour in every batch.

The harvested agave piñas are slow-roasted in traditional brick ovens over wood fire for more than 30 hours. This slow transformation converts starches into natural sugars, unlocking rich, layered character. The cooked agave is then gently crushed using stone Tahonas to extract pure juice.

The extracted juice, or mosto, is naturally fermented for up to 21 days, allowing depth, character, and complexity to develop slowly and without haste. It is then double-distilled in copper pot stills, producing a crystal-clear spirit with a smoky edge and notes of sweet agave. The result is El Centurion 102 Silver (Blanco) - pure, balanced, and unmistakably ours.

Rested in American oak for up to 6 months, our Aged Reposado (‘Liquid Gold’) develops a warm golden hue with smooth notes of caramel and roasted agave.

For greater depth, select batches are aged for 13+ months, creating a richer, more complex Extra-Aged Añejo with layered vanilla and subtle spice.

Each batch is carefully bottled to preserve purity, character, and balance.
