Smoky thyme paloma, grapefruit being squeezed

SMOKY THYME PALOMA

It’s not a Camps Bay sunrise, it’s our smoky, citrus-driven fresh twist on a classic Paloma.


Ingredients

  • 60 ml El Centurion 102 Aged (Reposado)
  • 30 ml fresh grapefruit juice
  • 15 ml fresh lime juice
  • 15 ml cane syrup
  • 3 sprigs fresh thyme
  • Splash of lemon-lime soda
  • Garnish: thyme sprig & lime wheel

Method

Lightly muddle thyme in a shaker. Add tequila, grapefruit juice, lime juice, cane syrup, and ice. Shake well until chilled and fine strain into a Collins glass filled with fresh ice. Top with a splash of lemon-lime soda. Garnish with a thyme sprig and lime wheel.
